Grated Egg Salad | GIRLS WHO EAT

This easy homemade egg salad is great to have stored in the refrigerator during the week so you can make an easy and quick lunch or even a snack.  Enjoy it in a sandwich or use it as a side to a salad or with some crackers.  It takes no time to make and is an easy protein packed recipe to make!

For this recipe, you will need:

  • Eggs: I like to use pasture raised eggs because they pack in the most amount of nutrients
  • Mayonnaise: You can use a mayo made with avocado oil or regular mayo, but I recommend checking the ingredients to make sure that your mayo has no added refined sugar or inflammatory oils
  • Parsley: it’s best to use fresh parsley because this adds so much flavor to the dish
  • Dijon Mustard: I use a mustard with no added sugars or additives so remember to check the labels for this
  • Salt
  • Black Pepper
  • Sesame Seeds: adds the best crunch

Tips:

  • I recommend grating the egg using a wide handheld grater

How to Store:

  • Store in a sealed container in the refrigerator for up to three days

Ingredients  

  • 4 pasture raised hard boiled eggs
  • 2 tbsp mayonnaise
  • 2 tbsp parsley, chopped
  • 1 tbsp dijon mustard
  • 1/4 tsp salt
  • sprinkle of black pepper
  • sprinkle of sesame seeds

Instructions 

  • Bring a medium pot to a boil and then add the eggs for 10 minutes, making sure to keep the water boiling.
  • Fill a medium bowl with ice and some water and move eggs to the ice bath to cool when finished. Leave the eggs in the ice bath for 4-5 minutes or until they are fully cool.
  • Remove the egg shells and then use a wide holed grater to grate the eggs into a medium bowl.
  • Add in the mayonnaise, fresh parsley, mustard, salt, pepper, and sesame seeds and mix well and ENJOY!
