Avocado Pomegranate Salsa

This is one of the most refreshing dishes made with fresh avocado, pomegranate seeds, and cucumber! Not really sure if it should be considered a salsa or a guacamole, but it is super simple to make with only 6 ingredients. This salsa can be enjoyed plain, with chips, or cut veggies and is ready in less than 10 minutes.

To make this recipe, you will need:

  • Avocado – This should be enjoyed same day since avocado doesn’t stay fresh the next day.  Adding lime juice to the avocado will keep it from browning.
  • Pomegranate
  • Cucumber
  • Red Onion
  • Fresh Mint – No mint? No problem! You can leave that out
  • Lime
  • Salt

Tips:

  • This should be enjoyed same day as avocado doesn’t stay fresh and delicious the next day

Ingredients  

  • 2 avocados
  • 1 cup pomegranate seeds
  • 1/4 red onion, diced
  • 1 small cucumber, diced (½ large cucumber)
  • 2 tbsp fresh mint, chopped
  • 1/2 lime
  • sprinkle salt

Instructions 

  • Cut onion and cucumber, chop mint, and add all ingredients to a medium mixing bowl.
  • Squeeze fresh lime juice
