Easy Honey Ghee Carrots

Need a quick and easy seasonal side dish for the holidays?  This carrot recipe is ready in less than 30 minutes and is gluten free and vegetarian. Carrots are in season in the fall and cooking them in ghee or butter brings out the carrots natural sweetness.  The combination of ghee and honey is not too sweet and this is the perfect dish for Thanksgiving!

For this recipe, you will need:

  • Carrots: Use local seasonal carrots if you can for the best taste and flavor
  • Ghee: you can substitute with butter
  • Honey: local or raw honey are my first choices and you can usually find them at your farmer’s markets or local grocery store
  • Garlic: this has so many healthy benefits including being great for your immune system
  • Salt
  • Black Pepper
  • Parsley: fresh parsley is my choice but you can always sprinkle some dried parsley on top if that is not an option

How to Store:

  • Store in a sealed container in the refrigerator for up to 3 days

Ingredients  

  • 2 lbs carrots, peeled (or unpeeled)
  • 1/3 cup ghee, melted
  • 2 tbsp honey
  • 4 garlic cloves, minced
  • 1/4 tsp salt
  • sprinkle of black pepper
  • 2 tbsp fresh parsley, chopped

Instructions 

  • Preheat the oven to 425 degrees and line a baking dish with parchment paper.
  • Wash and peel the carrots, then cut them into 3-4 inch pieces and place in a mixing bowl.
  • Mince the garlic and chop the parsley.
  • Melt the ghee in the microwave. Add the ghee over the carrots to the mixing bowl. Then drizzle the honey, garlic, salt, and pepper over the carrots and mix together until coated well.
  • Place the carrots on a parchment paper lined baking dish.
  • Cook for 22-25 minutes. Remove from the oven, put into your serving dish and then top with fresh parsley and ENJOY!
