Apple Cinnamon Pecan Cake

apple cinnamon pecan cake | GIRLS WHO EAT

This cake originally started out as a coffee cake, but ended up having more of a crumble topping so it became a pecan cake and I thought it would be a perfect holiday dessert. The top is sweet, crunchy, and buttery and the base is light and fluffy with a subtle apple taste. This cake is vegan, gluten free, and refined sugar free.

To make this recipe, start by making your vegan buttermilk, which is a mix of nut milk and apple cider vinegar. Let this sit for 10 minutes and while this cures, mix together all of your pecan crumble ingredients in a large bowl. In a separate bowl, mix together the base ingredients. Then add the base to a pan spreading it out evenly and top with the pecan crumble and it’s ready to bake! This cake is delicious on its own, paired with herbal tea, or with a cold scoop of vanilla ice cream.

I used oat flour in this recipe, which gives the cake a heartier taste. I love to cook with oat flour and you can either buy it pre-made or you can make your own by grinding rolled oats in a high speed blender until it becomes flour.

This is such an easy cake to whip up for the holidays that will impress friends and family! It also is ready in less than an hour and prep is super easy.

  • 1 1/2 cups oat flour
  • 1/2 cup coconut sugar
  • 1 1/2 tsp baking powder
  • 1/2 tsp salt
  • 3/4 cup almond milk
  • 1 tbsp apple cider vinegar
  • 1/4 cup vegan butter, melted
  • 1 tsp vanilla
  • 1 cup apples, grated

Pecan Crumble

  • 1/4 cup vegan butter, melted
  • 1/2 cup oat flour
  • 1/2 cup coconut sugar
  • 1 1/2 tsp cinnamon
  • 3/4 cup pecans, chopped

Instructions

  • Preheat the oven to 375 degrees and line a 9’’ baking pan with parchment paper.
  • In a small bowl, mix together the almond milk and apple cider vinegar. Let sit for 10 minutes (this becomes vegan buttermilk).

  • Grate apples and squeeze out any excess water with a cheesecloth or dish towel.
  • In another medium bowl, mix together all the dry base ingredients (oat flour, coconut sugar, baking powder, salt). Add in wet ingredients (buttermilk, vegan butter, vanilla, and apples) and mix together well.
  • Place the base batter into the baking pan and use a spatula to make sure it is even.
  • Sprinkle the crumble over the entire top of the base so that it is fully covered.
  • Cook for 20 minutes and let cool, then ENJOY!
