Cucumber Dill Salad

This is the easiest salad to prepare with only 6 ingredients that can be served with your favorite protein or enjoyed as a side. It is a crunchy and raw salad with a vinegar herb dressing that is tangy, sweet, and salty. It’s a great quick dinner or lunch option and is ready in less than 10 minutes.

For this recipe, you will need:

  • Cucumber: You can either hand slice your cucumbers or use a mandoline, but you want them to be about ¼ inch slices
  • Red Onion
  • Dill:  I like to use fresh dill instead of dried for this
  • Red Wine Vinegar
  • Olive Oil
  • Salt + Pepper
  • Maple Syrup or Honey: This adds a hint of a sweetness to the dressing, you can also use honey or omit entirely

Tips:

  • You can make the dressing in advance and store it in the fridge for up to 5 days

How to Store:

I would recommend eating the cucumbers mixed with dressing the same day you make the salad, but you could store for this salad for up to 3 days in the refrigerator in a sealed airtight container

Ingredients  

  • 1 large cucumber, sliced into ½ inch pieces
  • 1/2 red onion, thinly sliced
  • 1 tbsp fresh dill, chopped
  • 1 tbsp red wine vinegar
  • 2 tbsp olive oil
  • sprinkle of salt and pepper
  • splash of maple syrup

Instructions 

  • Cut the cucumbers and onions into ¼ inch slices and place on a plate.
  • Mix together the dill, vinegar, olive oil, salt, pepper, and maple syrup for the dressing.
  • Pour the dressing over the cucumbers and onions and mix together. ENJOY!
