No Bake Birthday Cookie Dough Bites (vegan, gluten free, dairy free) | GIRLS WHO EAT

I’ve always loved cookie dough, but was always told by my parents as a kids not to eat it because of the raw eggs. Remember those days?! Well now, you can have all the raw cookie dough your heart desires because I created an egg free dough made with only 6 ingredients and it uses your favorite nut or seed butter.

Now, I love anything that tastes like dessert, requires no baking whatsoever, and is only six ingredients. These birthday inspired cookie dough balls are exactly that. They can be whipped up in 5 minutes and are made with Supernatural, a natural plant based company that makes delicious and clean sprinkles! Did you know most sprinkles are made with fake coloring and additives?

To make these bites, you put all the ingredients in a bowl and mix well! Then you want to roll them into dough bites and place them on a baking tray or in a large container (make sure none are on top of each other) and store them in your refrigerator and allow them to harden before you dive in. The dough bites can be stored in your refrigerator in a sealed container for a few days to enjoy.

Substitution ideas:

  • Maple Syrup: you can swap honey for the maple syrup or not use any additional sweetener if you are sensitive to sweetness and only want to use the sprinkles
  • Sprinkles: you can swap the sprinkles for chocolate chips or coconut flakes
  • Almond Butter: this recipe would taste great with any nut or seed butter

Ingredients  

  • 1 cup almond flour
  • 3/4 cup almond butter
  • 1/2 tsp vanilla extract
  • 1/4 tsp salt
  • 1/4 cup sprinkles
  • 1/2 tbsp maple syrup

Instructions 

  • In a medium mixing bowl, mix together all ingredients until a dough forms.
  • Line a baking pan with parchment paper.
  • Roll 1-2 tbsp size dough balls and place evenly on the baking pan.
  • Put the pan in the refrigerator for 1-2 hours. ENJOY!
