Romesco Hummus | GIRLS WHO EAT

I love having hummus in my refrigerator so I can have it as a high protein snack or to top my salads! It’s always fun to experiment with different flavors of hummus because there are endless options and this one was so easy to make, plus it’s gluten free and vegan. I recently ordered an already made Romesco Sauce from Kaari Foods (use code GIRLSWHOEAT for 15% off your online order) so I used that to give this hummus a lot of taste and it’s red color!

Hummus is super easy because you just throw everything into the blender and mix until smooth! There is basically no prep for this dish and you can easily whip it up right before dinner for a fun little appetizer or enjoy it as a midday snack! For this recipe, I also used the chickpea water also known as aquafaba, which helps give the hummus a more creamy texture and limits food waste! If you plan to use aquafaba like I did, make sure to keep a little bit of it when you drain the liquid from your can!

You can eat your hummus plain, on a salad, or with crackers, pita, or fresh cut veggies!

Substitution Ideas:

  • Aquafaba: you can use water or olive oil
  • Romesco Sauce: use pesto or make your own romesco sauce (you need oil, red pepper, lemon, almonds, and garlic)

  • Food Processor

Ingredients  

  • 1 can chickpeas
  • 1/4 cup romesco sauce
  • 1 1/2 tbsp tahini
  • 1 tbsp aquafaba (keep from chickpeas)
  • 1/8 cup water
  • salt to taste

Instructions 

  • Drain the chickpeas under cold water for about 1 minute - make sure to save a little but of the water to use in the recipe.
  • Place all of the ingredients in a high speed blender and blend until smooth.
  • Place hummus in a bowl and top with a little olive oil, red pepper flakes, sesame seeds, oregano and ENJOY!
