Herby Whipped Ricotta Dip

This light whipped ricotta dip comes together in less than 10 minutes and can be enjoyed with tortilla chips, cut vegetables, in a sandwich or with bread. Packed with flavor from fresh herbs, honey, and lemon juice, it is so easy to make and a perfect spring or summer appetizer! It can also be paired with your favorite wine or mocktail!

What you will need for this recipe:

  • Cashews: these should be soaked in water (placed in the refrigerator) for up to 4 hours as it helps soften the nuts
  • Lemon: fresh lemon juice gives the dip a lot of flavor
  • Garlic Powder
  • Salt
  • Honey: this gives the dip a subtle hint of sweetness
  • Herbs: I used a combination of dill, mint, and parsley, but you could also use thyme, oregano, and basil. To maximize flavor, I always suggest using fresh herbs over dried if possible
  • Tortillas: this is optional, but I made my own air fryer tortilla chips (you can also  use store bought instead)

Tips:

  • You can add lots of different toppings to the dip! I used roasted strawberries and tomatoes, but you could also just drizzle olive oil with more fresh herbs or even try a drizzle of honey and herbs for a sweeter version
  • To make your own air fryer tortilla chips, cut your tortillas into triangles and air fry them at 380 degrees for 6 minutes
  • To keep your herbs lasting longer, store them in a jar with the stems in water in your refrigerator

How to Store:

  • In a sealed airtight container in the refrigerator for up to 3 days!

Ingredients  

  • 1 1/2 cups raw cashews, soaked at least 4 hours
  • 1/2 cup + 2 tbsp water
  • 2 tbsp lemon juice
  • 1/2 tsp garlic powder
  • 1/2 tsp salt
  • 1 tbsp honey
  • 3 tbsp fresh herbs (mix of dill, mint, parsely)
  • tortilla chips (optional)

Instructions 

  • Let cashews soak in water in a bowl in the refrigerator for at least 4 hours. Drain the water from the cashews.
  • In a food processor or high speed blender, add cashews, water, lemon juice, garlic powder, salt, honey, and fresh herbs and blend until smooth.
  • Top with roasted tomatoes and strawberries, or a drizzle of either olive oil or honey and additional fresh herbs.
  • Serve with tortilla chips, bread, or vegetables and ENJOY!
