4 Ingredient Peanut Butter Cookies with Tahini Drizzle

I wanted to make a simple peanut butter cookie that was delicious and ready in less than 2o minutes and I made it happen. These cookies are 4 ingredients and are the perfect midday treat or dessert. They are gluten free and dairy free and take less than 5 minutes to prep!

To make these cookies, mix together all ingredients in a bowl until a dough forms. You will then make balls and flatten them on a baking tray and cook for 10-12 minutes. It’s seriously that simple!

For these cookies, I topped them with Soom Sea Salt Dark Chocolate Tahini (use code GIRLSWHOEAT for 10% off their website) which added some extra flavor and the most gorgeous drizzle! This is entirely optional, but anytime I can add chocolate into something I’m baking, I’m here for it!

Substitution Ideas:

  • Peanut Butter: any nut or seed butter
  • Egg: to make this vegan you can use a flax egg (1 tbsp flax meal to 2 ½ tbsp water + place in fridge and stir until an egg like texture forms)
  • Tahini Drizzle: you can use any dark chocolate melted or chocolate sauce

Ingredients  

  • 1 cup creamy peanut butter
  • 1/4 cup coconut sugar
  • 1/2 cup almond flour
  • 1 egg
  • drizzle of Soom Dark Chocolate Tahini

Instructions 

  • Preheat the oven to 350 degrees and line a baking sheet with parchment paper.
  • In a medium bowl, mix together all the ingredients until a dough forms.
  • Make cookie dough balls that are 2-3 tbsp in size and place on a baking sheet. Flatten down using your hand or the back of a spoon.
  • Bake cookies for 10 -12 minutes until the outside is lightly golden brown and top with a chocolate drizzle and ENJOY!
