Gluten Free Chocolate Lava Cake

When you think of National Dessert Day and the dessert you want to be eating, doesn’t Chocolate Lava cake instantly pop into your head? It certainly pops into mine. This lava cake is not your traditional sugar filled cake because it’s made with a healthy almond flour base and coconut sugar, making it refined sugar free. The cake takes 20 minutes to prep and make and is dairy free and gluten free, but whoever you serve it to won’t be able to tell the difference!

This recipe is super easy with minimal prep. I recommend you use these ramekins to make them since you will want a small dish that is oven safe to use so they come out perfectly cooked on the inside and nice and chocolatey on the inside! While you wait for your oven to preheat to 425 degrees, melt your chocolate chips in the microwave.  In a small bowl, mix together the egg, egg yolk, coconut sugar, vanilla extra, and salt and once mixed well, add in the melted chocolate chips, mix again, and finally add in the flour and blend well.

Make sure to coat the inside of your ramekins with oil so that your cake doesn’t stick to it. I recommend using coconut oil and putting it on a paper towel or cloth to coat the dish. This batter will make two perfect cakes in 3.5’’ ramekins! 

For this recipe, I used:

  • Chocolate Chips: I switch off between Hu Gems and Enjoy Life Mini Chips, both I get on Thrive Market because it saves me a lot of money
  • Coconut Oil: I get this one from Whole Foods or this one from Thrive Market. Trader Joe’s also has a great budget friendly option
  • Coconut Sugar: the best budget friendly one is from Trader Joe’s or I get this one from Thrive Market
  • Eggs: my favorite are Vital Farms and I love their transparency! If you look on the side of the box, it is stamped with the small farm the eggs came from. If you are looking for a budget friendly option, Target, Whole Foods, and Trader Joe’s all have their own lines – just try to get cage free and either organic or pasture raised if you can!
  • Vanilla Extract: the best budget friendly options are Whole Foods 365, Thrive Market, or Trader Joe’s
  • Almond Flour: my favorite one to use (and cheapest I have found) is from Thrive Market

Ingredients  

  • 1/3 cup chocolate chips
  • 1/4 tsp coconut oil, melted
  • 1 egg
  • 1 egg yolk
  • 3 tbsp coconut sugar
  • 1 tsp vanilla extract
  • sprinkle of salt
  • 1/3 cup almond flour

Instructions 

  • Preheat the oven to 425 degrees and oil the inside of the ramekins, making sure to get all sides coated well.
  • In a small bowl or cup, add chocolate chips and coconut oil and heat in microwave for 30 seconds (if not melted after 30 seconds, mix and heat for another 15 seconds).
  • In a bowl, mix together egg, egg yolk, salt, coconut sugar, and vanilla until smooth. Add in chocolate and coconut mixture and blend well. Slowly add in flour and mix until smooth.
  • Add the batter to two ramekins and cook for 13 minutes or until the cake has risen. Top with some smashed raspberries, ice cream, or powdered sugar + ENJOY!
