I am a big fan of making no-bake treats like these peanut butter bars that are just FIVE ingredients! They take a limited amount of time to prep and make and are just so good. I based this recipe off of my peanut butter copycat Reese’s recipe and loved it in bar form.
It’s so simple to make these bars, you just mix together peanut butter with maple syrup and coconut flour, and press the mixture down onto a parchment paper lined tray. Place this in the refrigerator to harden for about 10 minutes. While the PB base is in the refrigerator, put the chocolate and coconut oil on a stove to melt. Remove the PB base from the refrigerator and top it with the chocolate mixture. The fun part is that you can add any additional toppings you want such as dried fruit, coconut, nuts, or just a touch of salt. Place in the freezer and let sit for 20 minutes or until it hardens, top with some extra salt and enjoy!
These bars are a great post-dinner treat or just all around good to have on hand as a healthier dessert when you’re feeling like you need something sweet! They last for a couple of weeks in the freezer if stored in an airtight container. If you want them to be a bit softer, let them sit on the counter for 5-10 minutes before you eat them!

Substitution Ideas:
- Peanut Butter: you could use any nut or seed butter you like!
- Maple Syrup: you can use honey instead!
Remove from the freezer 15-20 minutes before you plan to eat the nice cream so it can soften a little bit. This nice cream can last in the freezer for up to two weeks!

No Bake Peanut Butter Bars
Cooking & Baking Supplies
- Baking Tray 9x9
- Parchment Paper
Ingredients
Peanut Butter Layer
- 1 cup peanut butter
- 2 tbsp maple syrup
- 3 tbsp coconut four
- salt (optional)
Chocolate Layer
- 1 cup chocolate
- 1 tbsp coconut oil, melted
Instructions
- Line a 9x9 baking tray with parchment paper.
- In a medium mixing bowl, mix together peanut butter, maple syrup, coconut flour, and a sprinkle of salt.
- Place this mixture onto the baking tray and flatten using your hands or a spatula so it’s about ½ inch to 1 inch thick.
- Put the peanut butter layer in the refrigerator.
- While the peanut butter layer hardens, put the chocolate and coconut oil on the stove over low medium heat until it melts. Mix occasionally.
- Remove chocolate from the stove and take out the peanut butter layer from the refrigerator. Pour the chocolate mixture over the peanut butter and use a spoon to make sure it’s the same thickness across the entire bar.
- Top with any of your favorites and place in the freezer to harden for about 15-20 minutes.
- Sprinkle some additional salt + ENJOY!
