Baked Lemon Ghee Herb Cod

This easy and simple four ingredient fish recipe is packed with protein and anti-inflammatory properties from the fresh herbs and ghee. It has a rich buttery taste and is both refreshing and hearty. Cod is a thicker white fish that is flaky with a mild taste. It is a great recipe to make in warmer months as it is light and can be served with your favorite vegetables or zoodles. This cod recipe is versatile and can be cooked on the stove, in the air fryer, in the oven, and even on the grill.

For this recipe, you will need:

  • Ghee: I love using ghee as a butter replacement and it’s lactose free. It’s packed with vitamins and anti-inflammatory properties and elevates the taste of any dish! My favorite one to use is 4th & Heart
  • Lemon: this adds zest and tanginess to the dish and a refreshing taste
  • Herbs: I used dill, mint, and parsley, but any fresh herbs would taste great. You could use basil, thyme, chives or oregano too. No fresh herbs? Substitute with 1 tsp of a combination of dried herbs
  • Cod: I aim to buy wild caught cod and get my fish from Sizzlefish (use code GIRLSWHOEAT for 15% off your order) or at my local farmers market

Tips:

  • Add in a clove of minced garlic for even more flavor
  • You could use any white fish instead of cod such as halibut
  • To cook fish in the air fryer (this will defer based on brand and size), I suggest a temperature of 390 degrees for 8-10 minutes. Make sure to preheat your air fryer for better cooking results
  • Squeeze extra lemon juice on top of the cooked fish for even more flavor
  • You can use butter or olive oil instead of ghee

How to Store:

  • Once cooled, in a sealed airtight container for up to 2 days!

Ingredients  

  • 1 1/2 tbsp ghee, melted
  • 1 lemon, sliced
  • 1 tbsp fresh herbs, chopped (dill, mint, parsley)
  • 1 4oz pieces of cod
  • salt + pepper to taste

Instructions 

  • Preheat oven to 375 degrees and line a 8x8 baking tray with parchment paper.
  • Melt ghee in the microwave and then coat the cod entirely with it.
  • Add fresh herbs over the cod and sprinkle it with salt and pepper.
  • Add lemon slices on top of the cod and cook in the oven for 15 minutes
  • Remove from the oven and serve with your favorite vegetables and ENJOY!
