Chia Crusted Salmon with Roasted Veggies

Chia Crusted Salmon (dairy free, gluten free, sugar free) | GIRLS WHO EAT

This recipe was actually created after I hit my head super hard on a corner of a cabinet and was looking for brain health foods that would get me feeling better quickly! Now, I make this salmon regularly because it’s so good with the chia crunch and it’s ready in 20 minutes. It is gluten free, sugar free, and made with only 7 ingredients.

Salmon, if sustainable and properly raised, and chia seeds are full of healthy Omega-3s, an essential nutrient needed for our bodies with amazing health benefits. This salmon also requires no marinating time. All you need to do is brush the salmon with oil, mix together the spices with the chia seeds, and coat the salmon fully in the mixture. Then place the salmon on a baking tray and cook in the oven. The chia seed crunch mixed with the soft texture of salmon goes together perfectly. You can serve this salmon over a bed of lettuce, some roasted veggies or zoodles!

Cooking & Baking Supplies

  • Baking Tray
  • Parchment Paper

Ingredients  

  • avocado oil (to coat salmon)
  • 1/4 tsp salt
  • 1/8 tsp black pepper
  • 1/4 tsp dill (fresh or dry)
  • 1/4 tsp garlic powder
  • 1 tbsp chia seeds
  • 1/2 lb salmon filet
  • 1 sprig of thyme (optional)

Instructions 

  • Preheat the oven to 400 degrees and line a baking pan with parchment paper.
  • Mix spices (salt, pepper, dill, garlic powder) and chia seeds in a bowl large enough to fit salmon fillet.
  • Rinse salmon with cold water and pat dry.
  • Coat the salmon filet fully with avocado oil and then rub on spice chia mixture to coat salmon fully (use a silicone basting brush) including the sides.
  • Cook salmon for 10-12 minutes and after removing from the oven sprinkle with fresh thyme and ENJOY!
