Skillet Tomato Broth Cod | GIRLS WHO EAT

This has been one of my favorite quarantine dinners. It is dairy free, gluten free, and sugar free and the tomato broth mixed with ghee over some veggies with cod is the best combination. The original recipe is from Rachael Good Eats and then I tweaked it a bit. With a rich butter taste from the ghee that mixes with the acid from the tomatoes, salt from capers, and tons of herbs it is such a flavorful dish I make regularly!

I recommend you use a 9’’ skillet, but a medium pan would also work. To start, you saute some veggies, then add in the cod and tomatoes, then top it off with some ghee and herbs and let it bake for a few minutes before it’s done. Serve over potatoes, rice, veggies, or cauliflower rice to get some healthy carbs in as well.

Ghee has so many health benefits and is naturally dairy free, but tastes like a butter so I love to use it when I cook and bake. It is a healthy fat full of omega 3s and can improve brain and heart health. Tomatoes are also full of vitamins and antioxidants and can help reduce heart disease and cancer.

Substitution Ideas:

  • Cod: any white fish will work and scallops also taste great with this
  • Chicken use bone or vegetable broth instead
  • Tomatoes: fresh tomatoes work just as well

Cooking & Baking Supplies

  • Lodge Cast Iron Skillet

Ingredients  

  • 2 4oz cod filets
  • 2 tbsp olive oil
  • 2-3 cups mushrooms, sliced
  • 1/2 onion, chopped
  • 1 clove of garlic, minced
  • ️salt + pepper
  • 1 cup canned peeled tomatoes, chopped
  • 2 tbsp capers
  • 1 1/2 tbsp ghee
  • 1/2 cup low sodium vegetable broth
  • ️squeeze of 1/2 lemon (optional)
  • ️sprinkle of thyme + oregano

Instructions 

  • Heat the olive oil in the skillet on high heat and once hot, add in the mushrooms, onions, and garlic. Stir with a spatula and cook for about 5 minutes or until vegetables are soft.
  • Rinse cod with cold water and pat dry.
  • Once the vegetables are soft, add in the cod, tomatoes, and a sprinkle of salt and pepper and cook for a few minutes (about 4-5).
  • Add in ghee, capers, broth, lemon, thyme, oregano and cover pan and cook for 5-7 minutes over medium heat until cod is cooked to your liking.
  • Remove from heat and enjoy over potatoes, rice, cauliflower rice, or roasted veggies and ENJOY!
