Spinach Strawberry Salad with Creamy Balsamic Vinaigrette

Making fast and easy salads is my go to lunch and the key to make a successful salad is to have your refrigerator and pantry stocked with healthy fruits, vegetables, seeds, and nuts.  This salad is assembled in less than 5 minutes and uses colorful berries and ingredients from my staple pantry list. To save time, prep and make the salad dressing in advance and use it on salads, grilled vegetables, or even fish.

For this recipe, you will need:

  • Spinach: try to buy organic spinach because it is on the Dirty Dozen list.  No spinach? Use any greens you have in your fridge already.
  • Cucumbers
  • Strawberries: try to buy organic spinach because it is on the Dirty Dozen list
  • Blueberries
  • Avocado
  • Walnuts: you could always swap these out for other nuts like almonds or pecans or additional seeds
  • Hemp Seeds: these superfoods add protein to the dish and a subtle flavor. No hemp seeds? You can use chia, flax or sunflower seeds instead

Tips:

  • This dressing will make enough for a few salads
  • Make this salad even more hearty by topping it with additional protein like salmon or my chickpea tuna salad

How to Store:

  • This salad is best eaten right away, but you can store the dressing in a jar for up to 2 weeks in the refrigerator!

Ingredients  

  • 2-3 cups spinach
  • 1/2 large cucumber or 1 small cucumbers, diced
  • 6 strawberries, halves
  • 1/4 cup blueberries
  • 1/2 avocado
  • 1/4 cup walnuts
  • sprinkle of hemp seeds, nuts or seeds (optional)
  • sprinkle black pepper

Balsamic Dressing

  • 1/4 cup balsamic vinegar
  • 2 tbsp olive oil
  • 1 tsp dijon mustard
  • 2 tsp honey
  • 1 garlic clove, minced
  • 1/4 cup dairy free yogurt

Instructions 

  • Mix together all balsamic vinaigrette ingredients in a small bowl.
  • Add spinach to the base of a medium bowl
  • Prep your cucumbers, strawberries, an avocado and add over the spinach with walnuts and blueberries.
  • Sprinkle preferred nuts or seeds and black pepper and top with balsamic vinaigrette and ENJOY!
