Air Fryer Accordion Potatoes

After seeing this trend on social media, I knew I had to try it. I mean potatoes are my favorite food so any excuse to try them in a different way, count me in! These potatoes can be made with any of your favorite spice blends. The hardest part of this recipe is cutting the potato into the accordion shape so it may take a few tries to get it right. Save your failed attempts and leftover scraps and throw the pieces into the air fryer with some salt, oil, and paprika (no food waste!). These accordion potatoes make a great side dish and I recommend enjoying them with chipotle mayo because it takes the recipe to a whole greater level!

What you will need for this recipe:

  • Two Skewers
  • Air Fryer: my favorite kitchen gadget that cooks food that tastes delicious and is done so quickly 
  • Russet Potatoes: try to buy organic russet potatoes since these are typically a GMO crop
  • Oil: my preference is extra virgin olive oil, which is not refined or processed
  • Paprika
  • Garlic Powder
  • Garlic
  • Fresh Parsley
  • Mayo: I use an avocado mayo but anyone works
  • Sriracha: this is also for the chipotle mayo

Tips:

  • You want thick enough pieces (at least 1 inch) of potatoes in order to get the accordion slices to work
  • When you cut your potatoes across and then diagonally, you want your cuts to be close together
  • Soaking your potatoes in water for 20 minutes releases some starch so that the potatoes get crispier
  • All air fryers vary based on type and size, so timing may vary

How to Store:

  • I prefer to make this and eat it at the same time as I find potatoes don’t heat up that well, but you can store in a sealed airtight container in the refrigerator for up to 2 days (try to keep sauce in a separate container).

  • Air Fryer

Ingredients  

  • 3-4 organic russet potatoes
  • 2 tbsp olive oil
  • 1/2 tsp paprika
  • 1/4 tsp garlic powder
  • 2 garlic cloves, minced
  • 2 tbsp parsley, chopped

Chipotle Mayo

  • 1/4 cup mayo
  • 3 tsp sriracha
  • 1 tbsp water

Instructions 

  • Wash and peel the potatoes, chop the parsley and mince the garlic.
  • Cut off the ends of the potatoes (about 1 inch), then cut the sides off the potatoes (about 1 inch) to create a rectangle shape. Next, cut the remaining potato down the center lengthwise (you want the potatoes to be about 1 inch thick) and place one potato slice between 2 skewers, lying flat.
  • Using a sharp knife cut straight lines closely together down the potato (the skewers help you to not cut fully through) that are close together, then flip the potato over, and cut thin diagonal lines )not all the way through) across the whole slice to create your accordion pieces.
  • Once all slices are cut, soak in cold water for 20 minutes.
  • Pat dry potatoes well, then in a medium mixing bowl coat them with olive oil, paprika, garlic powder, 1 tbsp parsley, and garlic cloves.
  • Preheat the air fryer to 390 degrees for 3 minutes.
  • Cover most of the air fryer base with tin foil (make sure you can still see some holes) and add the potatoes to the air fryer. Cook at 390 degrees for 10 minutes, then flip potatoes and cook for another 7 minutes.
  • Make the chipotle dip while potatoes cook in a small bowl.
  • Remove the potatoes from the air fryer, top with fresh parsley + ENJOY!
