This grilled vegetable recipe is marinated with an easy and simple lemon and garlic dressing.  It is great for summer and is simple and quick to prepare. These grilled vegetables taste delicious and will complement any protein or main meal you make.  The key to making these taste great is to let them marinate and soak up the flavor of the seasoning. If you don’t have a grill, you can roast these in the oven or saute them on the stovetop. 

For this recipe, you will need:

Zucchini: you can find these at your local farmer’s market in the fall and they are available at most grocery stores throughout the year

Bell Pepper

Olive Oil: I like to use EVOO (extra virgin) because it’s not refined or processed

Italian Seasoning

Lemon Juice: this adds zest and tanginess to the dish and gives you a boost of Vitamin C

Garlic: this has so many healthy benefits including being great for your immune system

Salt: I go light on the salt so you can add more to taste once the dish id done

Tips:

  • If you have no grill, cook these in the oven at 375 degrees for 20-30 minutes (or until soft)
  • You can easily swamp in other vegetable for this recipe, especially ones that are in season

How to Store:

  • One cooled, store leftovers in the refrigerator in a sealed airtight container for up to 2 days

Ingredients  

  • 1 zucchini, sliced into ½ inch thick slivers
  • 2 bell pepper, cut into 2 inch thick pieces
  • 1/2 cup olive oil
  • 4 tsp Italian seasoning
  • 2 tbsp lemon juice
  • 4 small garlic cloves, minced
  • 1/2 tsp salt
  • 2 tbsp parsley, chopped

Instructions 

  • Cut and prepare all of the vegetables.
  • In a small mixing bowl, add olive oil, Italian seasoning, lemon juice, garlic cloves, salt, and parsley and mix together.
  • Place the vegetables in a baking tray or sheet pan and coat with the oil mixture. Let vegetables sit and marinate for 15-30 minutes.
  • Add vegetables to a medium heated grill (300 degrees) and cook until charred and cook through.
  • Enjoy with your favorite protein!
