Make Your Own Peach Tomato Salsa

Tomatoes and peaches are in season now so this fresh salsa is the perfect dish to make that combines these two delicious ingredients.  You can make this salsa a day in advance so the recipe has time to blend together or make it right before you want to enjoy it.  I highly recommend eating it with tortilla chips or crackers or using it to top any fish dish to give your meal a seasonal taste. 

For this recipe, you will need:

Tomatoes: I used heirloom, but any larger variety works

Bell Pepper: I used a red pepper, but any color will work

Jalapeno

Red Onion

Peach: Summer peaches are the best, super sweet and juicy

Cilantro: adds flavor to the dish, but you can omit this if you don’t like the taste of cilantro

Basil

Lime Juice

Salt

Tips:

  • You can make this the night before so the flavors have time to mix together fully
  • You can substitute mango or pineapple instead of peaches

How to Store:

  • Store in an airtight container in the refrigerator for up to 2 days

Ingredients  

  • 2 ​​medium tomatoes, diced
  • 1 bell pepper, diced
  • 1/2 jalapeno, diced
  • 1/2 red onion, diced
  • 1 peach, cubed
  • 1 tbsp cilantro, chopped
  • 1 tbsp fresh basil, chopped
  • 1 tbsp lemon juice (½ lime)
  • 1/4 tsp salt, or to taste

Instructions 

  • Prepare the tomatoes, bell pepper, jalapeno, red onion, peach, cilantro, and basil and add to a medium bowl.
  • Add in the lemon juice and salt and mix all together.
  • Enjoy with your favorite tortilla chips or as a side with fish.
