Air Fryer Greek Style Lemon Potatoes

This simple crispy lemon potato recipe is made with Greek inspired spices and ingredients and is cooked in the air fryer so it’s ready in less than 20 minutes. For this recipe, you will use a lot of fresh lemon juice, oregano, and olive oil. It’s a great side dish and pairs perfectly with fish.

For this recipe, you will need:

  • Air Fryer
  • Medium Mixing Bowl
  • Potatoes: any white potato variety will work
  • Olive Oil: I used EVOO (extra virgin) because it’s not refined or processed
  • Oregano: I used dried oregano, but you could use 1 tbsp of fresh chopped oregano
  • Lemon Juice: this is what gives the recipe a lot of flavor and I recommend having extra on hand to squeeze additional fresh lemon juice on the cooked potatoes
  • Salt

Tips:

  • Cut your potatoes in even wedges and pieces so they cook properly
  • Air fryer cooking time may vary based on your air fryer brand and size
  • No air fryer? You can cook these in the oven at 400 degrees for 20-30 minutes (flipping halfway) or until they are your desired crispiness 
  • Keep extra lemon juice on hand to squeeze over your cooked potatoes
  • Enjoy potatoes plain, with ketchup, or with mustard

How to Store:

  • These are best eaten right away, otherwise they become soggy and not crispy!

  • Air Fryer

Ingredients  

  • 3 cups potatoes, small wedges
  • 2 tbsp olive oil
  • 1 tsp dried oregano
  • 2 tbsp lemon juice (extra to top)
  • 1/2 tsp salt

Instructions 

  • Wash potatoes well and dry skins, then cut into small even size wedges.
  • Place wedges in a medium mixing bowl and add olive oil, oregano, lemon juice, and salt and mix together well.
  • Preheat the air fryer to 380 degrees for 3 minutes.
  • Add your potatoes to the air fryer and make sure no potatoes overlap each other. You can place a piece of tin foil down first for an easier clean up, but make sure some holes are exposed.
  • Air fry potatoes at 380 degrees for 11 minutes, then flip potatoes over and air fry for another 7 minutes.
  • Remove potatoes from the air fryer, squeeze some more lemon juice on top, and ENJOY!
