Apple Maple Cinnamon Coconut Cake

After a few failed attempts, I created one of the most delicious apple cinnamon cakes that can be enjoyed for breakfast or as a snack. This cake is dairy free, gluten free, and refined sugar free and only takes about 45 minutes to make including prep and bake time.

The combination of apples mixed with coconut and cinnamon is so comforting and with apples in season through Fall, it’s the perfect time to whip this up! They are super light and airy, but moist enough with chunks of apples in each bite. This cake pairs perfectly with a warm latte or a chai tea if you want a morning or midday treat.

Store this in the refrigerator for up to 3 days and heat it up for 30 seconds before you enjoy it! If you’re feeling like you want some extra sugar add a bit of nice cream or whipped cream on top.

Substitution Ideas:

  • Dairy Free Milk: you can use regular milk
  • Maple Syrup: you can use coconut sugar
  • Apples: you can use pears instead

Ingredients  

  • 2 eggs
  • 1/4 cup dairy free milk
  • 2 tbsp maple syrup
  • 2 tbsp dairy free butter, melted
  • 2 cups almond flour
  • 3 tbsp coconut flour
  • 1 tsp cinnamon
  • 1 tsp baking powder
  • 1/4 cup coconut sugar
  • 3/4 cup chopped apples
  • 1/4 cup coconut flakes
  • apple slivers, walnuts, coconut, coconut sugar to top (optional)

Instructions 

  • Preheat the oven to 350 degrees and line a baking pan with parchment paper.
  • In a medium mixing bowl, mix together wet ingredients (eggs, milk, maple syrup, butter) until smooth.
  • Add in the dry ingredients to the mixing bowl (almond flour, coconut flour, cinnamon, baking powder, coconut sugar) and mix until smooth.
  • Stir in the chopped apples and coconut flakes.
  • Pour mixture into the baking pan and top with thin slices of apple, a sprinkle of coconut, and a sprinkle of coconut sugar (you can also top with nuts like pecans or walnuts).
  • Cook for 30 minutes and then remove from the oven, sprinkle a little more coconut sugar on top and cover pan with tin foil and cook for another 5 minutes.
  • Remove the pan from the oven and let cool, then ENJOY!
