This recipe uses caramelized onions made with ghee, mixed with steamed green beans, and a vinegar pomegranate mustard dressing that is delicious. It takes about 45 minutes total to make and is vegan, gluten free, and refined sugar free.
There are a few star ingredients in this dish so let’s start with the first: caramelized onions. Something about adding caramelized onions to a dish instantly makes it better…who else is with me? The key to making delicious caramelized onions is to take your time and cook the onions on low heat. It takes about 25 minutes to get the onions caramelized and you will want to cook on low heat and stir every couple of minutes until your onions brown. You can use any kind of onion – whatever you have in your pantry. The process of caramelizing is just bringing out the natural sugars in the onions!
Another star ingredient is one of our favorite natural sweeteners: Just Date pomegranate molasses . This sauce is a simple combo of just pomegranates and dates and it adds just the right touch of sweetness to the any sauce or dish.
To make this dish, start by caramelizing your onions, which takes some time as noted above and steam your green beans. You can also roast your green beans or saute them if you prefer. While the veggies are cooking, you can whip up your dressing. Once this is made, set it aside and wait for the veggies to finish. When everything is done, mix it all together in a large bowl, sprinkle it with pomegranate seeds, and serve!
Substitution Ideas:

Black Garlic Green Beans with Pomegranate Seeds
Ingredients
Green Beans
- 1 lb green beans
- 2 onions, sliced
- 2 tbsp ghee
- 1/4 cup pomegranate seeds
Dressing
- 3 tbsp apple cider vinegar
- 2 tsp dijon mustard
- 1/2 tsp pomegranate molasses
- 6 tbsp olive oil
Instructions
- In a large pan, add sliced onions and ghee and saute over low heat for 25 minutes or until they turn golden brown. Be sure to stir every couple of minutes.
- In a pot, steam green beans over medium heat for 10 minutes until they are soft.
- While the vegetables cook, mix together all dressing ingredients in a small bowl and set aside.
- When onions and green beans are finished cooking, add the vegetables to a large bowl, pour in the dressing and mix everything together well. Then top with pomegranate seeds and ENJOY!
