Lemon Almond Broccoli

This super simple side dish is made with broccoli, some sliced almonds, and a lemon dressing that takes less than 5 minutes to prepare. You can pair this dish with your favorite protein or have it as a side to any entree. It is zesty, refreshing, and delicious!

For this recipe, you will need:

  • Broccoli: you can swap out cauliflower for broccoli 
  • Almonds: I like to buy these pre-sliced, but you can also use whole almonds and cut them.  No almonds? No problem! Just leave them out!
  • Garlic
  • Olive Oil
  • Lemon
  • Salt + Pepper

How to Store:

Let broccoli cool fully, then store in a sealed airtight container in the refrigerator for up to 3 days!

Cooking & Baking Supplies

  • Baking Tray
  • Parchment Paper

Ingredients  

  • 1 large head of broccoli, cut into florets (approximately 4 cups)
  • 1/4 cup sliced almonds
  • 1 tbsp olive oil
  • sprinkle of salt

Dressing

  • 1 garlic clove, minced
  • 1 tbsp olive oil
  • 1 tbsp lemon juice
  • salt and pepper to taste

Instructions 

  • Cut your broccoli into florets.
  • Preheat the oven to 375 degrees and line a baking dish with parchment paper (make sure it will be large enough for the broccoli and almonds that will be added later in step 4.
  • Add broccoli florets to the tray making sure to not overlap them. Brush with olive oil and sprinkle with salt. Cook on top rack for 20 minutes, then remove from the oven and flip broccoli over. Make space for almonds and add them to the baking tray. Cook for 4 minutes, shake almonds, then cook for another 4 minutes or until golden brown.
  • Remove the tray from the oven and let cool.
  • While broccoli cooks, prepare the lemon dressing by mixing all of the ingredients together in a bowl or jar.
  • Pour the dressing over the broccoli and ENJOY!
