This is hands down one of my favorite granola combinations I have made. You can’t taste the turmeric, but it adds anti-inflammatory properties to this recipe and the combination mixed with coconut flakes and maple syrup is so delicious. Lately, I have been loving making my own granola over store bought options especially because it is so easy to make. I find homemade versions are crunchier, fresher, and lighter! It also is shockingly so easy and quick to prep and you can make a large batch that can last a while. This granola is made with 9 simple ingredients and makes enough for a whole week of breakfast. Plus, it’s gluten free and dairy free!
What you need to make this recipe:
- Two Mixing Bowls
- Baking Sheet with Parchment Paper
- Oats: try to opt for gluten free and organic oats! Organic oats help ensure that they have not been sprayed with the toxic chemical glyphosate
- Coconut Flakes: my preference is unsweetened because we add maple syrup and honey into the granola to make it sweeter. Flakes are the thicker sized coconut pieces versus shredded coconut
- Pecan: you could substitute almonds or walnuts or leave out nuts entirely
Turmeric: I used dried turmeric - Salt
- Maple Syrup
- Honey
- Coconut Oil
- Vanilla Extract
Tips:
- Mix dry and wet ingredients separately, then combine and mix well and then spread the mixture onto a baking tray with parchment paper
- You could add in 1 tsp of cinnamon
How to Store:
- Store in a sealed airtight container (I use a large glass jar) at room temperature for up to a week!

Ingredients
- 4 cups gluten free oats
- 1 cup unsweetened coconut flakes
- 1 cup pecan pieces
- 1 tsp turmeric
- 1/4 tsp salt
- 1/4 cup maple syrup
- 1/4 cup honey
- 1/4 cup coconut oil, melted
- 1 tsp vanilla extract
Instructions
- Preheat the oven to 350 degrees and line a baking tray with parchment paper.
- Mix all dry ingredients (oats, coconut, pecan, turmeric, and salt) together in a mixing bowl.
- Mix wet ingredients (maple syrup, honey, coconut oil, vanilla extract) together in a different mixing bowl.
- Add wet ingredients into the dry ingredients and mix everything together well.
- Spread ingredients out evenly on the parchment lined baking tray.
- Bake at 350 degrees for 30 minutes. Check at the 20 minute mark and if the edges are browned a lot, loosen the granola on the tray and spread it out again and bake for another 10 minutes. ENJOY!
