Salmon is one of my favorite fish to cook for a quick dinner because it is easy to make and also has so many health benefits including lots of omega-3 fatty acids. If you use an air fryer to make this, this delicious dinner is ready in 20 minutes. You can also pan sear or bake the salmon, if air frying is not an option. Tomatoes and olives add great acidic and salty flavor to this dish and spinach adds in a lot of vitamins and minerals. Â
For this recipe, you will need:
- Air Fryer: times may vary for cooking with different air fryers so you may need to adjust timing to fit yours

- Olive Oil: I like to use EVOO (extra virgin) because it’s not refined or processed
- Onion
- Cherry Tomatoes
- Spinach: buy organic spinach because it is on the Dirty Dozen list
- Olives: I used a mix of olives, which include kalamata that I buy from the grocery store
- Lemon Juice
- Capers
- Oregano: Instead of dried oregano, you can use 1 tbsp fresh oregano
- Dill
- Paprika
- Pepper
- Salt: I go light on the salt so you can add more to taste
Tips:
- If you do not have an air fryer, you can bake it in the oven at 375 degrees for 12-15 minutes (or until cooked through and it flakes with your fork) or sear it on the stove in a well oiled pan over medium heat until cooked through
How to Store:
- Store leftovers in the refrigerator in an airtight container up to 2 days

Ingredients
- 2 tbsp olive oil
- 1/2 large onion, diced (about 1 cup)
- 1 cup cherry tomatoes, quartered
- 3 cups packed spinach
- 1/4 cup olives, sliced
- 1 tsp dried oregano
- 1 tbsp lemon juice
- 1 tbsp capers
- 1 tbsp fresh dill, chopped
- pepper
Salmon
- 2 4oz salmon pieces
- 1 tsp olive oil per piece
- sprinkle of salt
- sprinkle of paprika
- sprinkle of oregano
Instructions
- Dice your onions, cut your tomatoes, slice your olives and chop your dill.
- Add olive oil to a medium pan over medium heat and add onions to the pan. Cook for 5-6 minutes until browned.
- Add in cherry tomatoes and saute for 2-3 minutes, then add in olives, oregano, and spinach. Cook for 1-2 minutes until spinach starts to wilt, then add in lemon juice, capers, and dill and saute for 2-3 minutes. Top with fresh cracked pepper!
- Preheat the air fryer to 390 degrees for 4 minutes. Rinse salmon and pat dry. Coat with olive oil and sprinkle salt, paprika, and oregano and air fry salmon at 390 degrees for 7-8 minutes.
- Add spinach mix to a plate and top with salmon and ENJOY!
