When I hear September, I instantly think of all the fall things, from sweaters to pumpkin so what better way to welcome this new month than with pumpkin oat pancakes. These are dairy free, gluten free, and refined sugar free and packed with protein from the oats. I love oat pancakes because they keep me full until lunch and have the best texture.
For these pancakes, you can make your own oat flour by placing gluten free rolled oats into the food processor and blending until it is a fine flour. Once you have your flour, mix together the wet ingredients first, then add in the dry ingredients, and ta-da your batter is made! I love sneaking in veggies like pumpkin into these pancakes for extra nutrients and vitamins. I also added in my favorite Primal Palate Pumpkin Pie Spice to give it some extra flavor and delicious taste!

- Pumpkin Puree: if pumpkin is not your thing, you can easily do sweet potato puree

Pumpkin Oat Pancake

Ingredients
- 2 eggs
- 1 cup pumpkin puree
- 1/3 cup dairy free milk
- 1 tbsp maple syrup
- 1 tsp vanilla extract
- 1 1/2 cups oat flour
- 2 tsp baking powder
- 1/4 tsp teaspoon salt
- 1 1/2 tsp pumpkin spice
- 2 tbsp coconut oil, melted, to cook
Instructions
- In a large mixing bowl, whisk eggs and then add in all wet ingredients (pumpkin puree, nut milk, maple syrup, vanilla extract)
- Add dry ingredients into a bowl (oat flour, baking powder, salt, pumpkin spice) and mix well until smooth.
- Heat a large pan over medium heat on the stove and add coconut oil (approximately two tablespoons) so that the base of the pan is covered with oil.
- Add about ΒΌ cup of pancake batter to the pan for each pancake (you should be able to cook 3 pancakes at a time) and cook on each side for 3-4 minutes until golden brown. Continue until batter is done.
- Enjoy pancakes with maple syrup, nut butter, seeds, granola, or berries!
