Fig Honey Nice Cream

fig honey nice cream | GIRLS WHO EAT

I’m a huge nice cream fan over here! The banana based dairy free healthy “ice cream” really does the trick when I crave ice cream and I can eat the whole pint knowing it’s a better treat for me.  There are so many different combos you can make with frozen bananas and if you’re a fig or honey lover, then this one’s for you. Plus, its vegan, gluten free, and refined sugar free.

Nice cream is one of the easiest recipes to make and requires minimal prep. The only thing you need to do in advance is freeze the bananas. Seriously, it’s that simple. You will need a high power blender or food processor to make the nice cream. For this recipe, you will want to BBQ or roast your figs so they get soft and gooey before you mix them in. After you cook your figs, you will throw all ingredients into a blender and blend until smooth.

I was inspired to make this nice cream for two reasons. One, I’m addicted to figs. Two, when I used to eat dairy, I was obsessed with a local ice cream shop in New York that served fig ice cream and would go there all the time just to get this flavor.

I promise this recipe is the perfect light and refreshing treat as we head into fall!

Substitution Ideas:

  • Dairy Free Milk: you can use plant based milk or regular milk
  • Figs: you can use berries such as blueberries. strawberries, or blackberries

Remove from the freezer 15-20 minutes before you plan to eat the nice cream so it can soften a little bit. This nice cream can last in the freezer for up to two weeks!
