These raw no bake cookie dough balls are great and they are vegan, gluten free, and refined sugar free so they are the perfect treat. Since they are loaded with almond flour and nut butter, they are high in protein so a great midday snack or post-dinner treat! It was always MY favorite part as kids to sneak in raw cookie dough, but I was always told I couldn’t eat it because of the raw egg. Now, you don’t have to worry with these since no eggs are involved so all your raw cookie dough dreams can come true!

These literally take 5 minutes to make. You mix everything together, roll the dough into balls, place on a parchment lined baking tray, and store in the refrigerator to harden. You can leave these in the fridge for up to 5 days to enjoy!

Substitution Ideas:

  • Cashew Butter: you can use any sort of nut or seed butter
  • Date Nectar: you can use date syrup, maple syrup, or honey

    Ingredients  

    • 1 cup almond flour
    • 1/2 cup cashew butter
    • 1/2 tsp date nectar, date syrup, or maple syrup
    • 1/2 tsp vanilla extract
    • ️sprinkle of salt
    • chocolate chips (optional)

    Instructions 

    • In a medium mixing bowl, mix together flour and cashew butter until blended, then add in all ingredients except the chocolate.
    • Mix everything together in the bowl until smooth, then fold in as many chocolate chips as you would like.
    • Line a baking pan with parchment paper and roll your dough into 2 tbsp balls (you can always do bigger or smaller).
    • Place your dough balls in the refrigerator and let sit for about 30 minutes to an hour to harden.
    • Once you remove these from the refrigerator to eat, let them sit for a few minutes, then ENJOY!
