This hemp seed pesto is a great vegan and dairy free alternative to traditional pesto and is packed with protein thanks to the hemp seeds. There are endless ways to use this pesto, some ideas are as a pasta sauce, over grilled or roasted vegetables, on toasts, or even as a salad dressing (you can add some water to thin it out).  It is super easy to make and is ready in 5 minutes. 

For this recipe, you will need:

Hemp Seeds: these superfoods add protein to the dish and a subtle flavor

Garlic: this has so many healthy benefits including being great for your immune system

Nutritional Yeast: this is a great vegan replacement for cheese and is packed with B vitamins

Salt: I go light on the salt so you can add more to taste

Kale: I used curly kale, but any kale should do

Lemon Juice

Olive Oil: I like to use EVOO (extra virgin) because it’s not refined or processed

Pepper

Tips:

  • No kale? You can swap it out for basil, spinach or arugula
  • No hemp seeds?  Swap this out with sunflower seeds, pumpkin seeds, walnuts, or almonds
  • Use water to thin out the sauce if you find it too thick.  Add a little bit at a time until it is the consistency you want

How to Store:

  • Store in the refrigerator in an airtight container for up to one week 
  • Add pesto an ice cube tray and freeze for later

  • Food Processor

Ingredients  

  • 1/4 cup hemp seeds
  • 1 garlic clove, minced
  • 1 tbsp nutritional yeast
  • 1/4 tsp salt
  • 2 cups curly kale, chopped
  • 2 tbsp lemon juice
  • 1/4 cup olive oil
  • pepper to taste

Instructions 

  • Mince your garlic and destem your kale by removing the center stem from the leaves.
  • Add all of the pesto ingredients into a food processor or high speed blender and process until everything is mixed together well and the pesto is smooth.
  • Add extra salt or pepper to taste and then remove from the blender.
  • Add pesto to your favorite dishes + ENJOY!
