This hemp seed pesto is a great vegan and dairy free alternative to traditional pesto and is packed with protein thanks to the hemp seeds. There are endless ways to use this pesto, some ideas are as a pasta sauce, over grilled or roasted vegetables, on toasts, or even as a salad dressing (you can add some water to thin it out). It is super easy to make and is ready in 5 minutes.Â
For this recipe, you will need:
Hemp Seeds: these superfoods add protein to the dish and a subtle flavor
Garlic: this has so many healthy benefits including being great for your immune system
Nutritional Yeast: this is a great vegan replacement for cheese and is packed with B vitamins
Salt: I go light on the salt so you can add more to taste
Kale: I used curly kale, but any kale should do
Lemon Juice
Olive Oil: I like to use EVOO (extra virgin) because it’s not refined or processed
Pepper
Tips:
- No kale? You can swap it out for basil, spinach or arugula
- No hemp seeds? Swap this out with sunflower seeds, pumpkin seeds, walnuts, or almonds
- Use water to thin out the sauce if you find it too thick. Add a little bit at a time until it is the consistency you want
How to Store:
- Store in the refrigerator in an airtight container for up to one weekÂ
- Add pesto an ice cube tray and freeze for later
