Walnut Parsley Creamy Pesto Sauce

This is a sauce you never know you needed, but once you try it, you will not be able to get enough. It is so creamy and made with lots of parsley and walnuts, which is such a delicious combination. It can be made in less than 5 minutes and all you need is a high-speed blender! This sauce is vegan, dairy free, and sugar free and will be a hit with everyone.

I love to put this on our Summer Pasta salad, but you can easily mix it in with roasted vegetables, grains, or even use it as a salad dressing. This version comes out a bit thicker, but if you are looking for something thinner, just slowly add 1 tablespoon of water at a time to the mix until you get to the consistency you want.

I love to use parsley in dishes because it’s in season for most of the year, including summer and is high in antioxidants, helps with eye health, bone health, and has cancer fighting properties. It is such a light herb that makes this pesto taste so refreshing!

  • Food Processor

Ingredients  

  • 1 1/2 cup walnuts
  • 1 1/2 cups parsley, chopped
  • 1/4 cup nutritional yeast
  • 2 garlic cloves, minced
  • 1/2 tsp salt
  • 1/4 cup olive oil
  • 1/2 cup water

Instructions 

  • Chop parsley on a cutting board.
  • Place all ingredients into a high speed blender or food processor and blend until creamy.
  • Remove from the blender and put over pasta, grains, or eat as a dip and ENJOY!
