This delicious and easy to make pasta is the Mediterranean version of the TikTok feta pasta trend that went viral earlier this year. It honestly is one of my favorite dinner recipes and is ready in under an hour. It’s a great last minute meal or one to serve when guests come over and this version meshes my love of gluten free pasta with mediterranean cuisine with olives, fresh herbs, and red onion.
For this recipe, you will need:
Tomatoes: I used cherry tomatoes, but any small variety will work or you can cut large ones up into smaller pieces
Kalamata Olives: this is my preferred type of olive for this dish
Dill: I use fresh herbs, but you can use 1 tsp of dried dill as well
Parsley: fresh herbs work best and you can replace this with basil or oregano as well
Olive Oil: I like to use EVOO (extra virgin) because it’s not refined or processed
Onion: I used a red onion, but you can use any onion you have
Italian Seasoning
Salt
Lemon
Feta: You can buy a block of feta at your local market for the freshest option. I used a variety called Dodoni and we got it at our local Greek market
Pasta: I used a gluten free pasta but any pasta works great
Pepper
Tips:
- You can make this without olives and just add in more tomatoes

Ingredients
- 1 9oz box cherry tomatoes
- 1/2 cup kalamata olives
- 1 tbsp dill, chopped
- 2 tbsp parsley, chopped
- 2 tbsp olive oil
- 1/4 red onion, thinly sliced
- 1/2 tsp Italian Seasoning
- 1/4 tsp salt
- 1/2 lemon, juiced
- 1 6oz block of feta
- 1 12oz box of gluten free pasta
- pepper to taste
Instructions
- Preheat the oven to 415 degrees.
- In an oven safe medium pan add tomatoes, olives, dill, parsley, Italian seasoning, salt, lemon and mix together with 1 tbsp of olive oil. Add the feta block in the center and drizzle another 1 tbsp of olive oil over it.
- Cook in the oven for 25-30 minutes, until tomatoes are wrinkled and roasted.
- Cook the pasta on the stovetop according to package directions.
- Remove the tomato mixture from the oven and mix everything together until a sauce forms. Then add the pasta to the feta tomato sauce, mix together until pasta is fully coated, and top with black pepper and more fresh herbs. ENJOY!
