This easy salmon recipe tastes great because it’s made with a lot of pecans giving it a delicious crunch. Salmon is a staple item on rotation in my house because it can be made so many ways and is also high in omega-3 fatty acids, vitamin B12, and antioxidants. This salmon is ready in less than 20 minutes and so it makes an ideal meal option when you are looking for a quick and easy high protein recipe!
For this recipe, you will need:
- Air Fryer

- Pecans: you can substitute with almonds or walnuts if you don’t have pecans
- Parsley: fresh herbs always add so much flavor and taste. You can use fresh chives, basil or oregano if you have those instead. If you need to use dried herbs, substitute with 2 tsp of spice instead
- Olive Oil: I like to use EVOO (extra virgin) because it’s not refined or processed
- Salt
- Pepper
Tips:
- Wash your salmon and pat it dry before you coat it with olive oil
- Use leftover salmon and top a salad with it for protein the next day
- If you do not have an air fryer, you can roast this in the oven instead (375 degrees for 12-15 minutes, or until it is cooked through to your liking)
- The salmon is ready when it is flaky with a fork so check it before eating
- Air fryer cooking time will vary based on type and size

- Store any leftovers in an airtight container in the refrigerator for up to 2 days

Ingredients
- 2 4oz pieces of salmon
- 3 tbsp pecans, chopped
- 2 tbsp fresh parsley, chopped
- sprinkle of salt + pepper
- 2 tsp olive oil (to coat salmon)
Instructions
- Preheat your air fryer to 390 degrees for 4 minutes.
- Wash your salmon and dry with a dishcloth.
- Chop your pecans and parsley.
- Coat the salmon in olive oil and top with pecans, parsley, and salt and pepper.
- Cook the salmon in the air fryer for 7-8 minutes. Check that it flakes with a fork to make sure it is ready and ENJOY!
