Air Fryer Zucchini Fries

This zucchini recipe makes a great side dish or appetizer and zucchini are always easy to find at the grocery store. You can keep this recipe very simple by using just the egg and cracker coating or mix it up by adding spices in the mixture. These fries are crispy on the outside, tender on the inside, and will be a crowd favorite.  While the fries are cooking, you can mix up some sauces for dipping. These take less than 30 minutes to make and are gluten and dairy free.

For this recipe, you will need:

  • 2 Small Mixing Bowls
  • Air Fryer: times may vary for cooking with different air fryers so you may need to adjust timing to fit yours
  • Zucchini: you can find these at your local farmer’s market in season, especially in the fall and at most grocery stores
  • Gluten Free Crackers: I used Hu Kitchen crackers as my go-to clean cracker choice but any brand works
  • Egg

Tips:

  • Try and cut the zucchini sticks into equal sizes by cutting the zucchini in half, then each half into thirds and then into equal size spears about 3”- 4” long
  • Lay out the sticks on a dish towel or paper towels, sprinkle with some salt and let them sit for about 10 minutes so they release some water for extra crispiness
  • Don’t overlap the zucchini sticks in the air fryer because they will not cook properly and will not get crispy
  • These are best eaten as soon as they are made because they tend to get soggier and lose their crispness if stored
  • To add more flavor to these sticks, add 1 tsp of Italian seasoning or taco seasoning to the cracker mixture
  • Eat with chipotle mayo (recipe below), marinara, or ketchup!

How to Store:

  • Store in an airtight container in the refrigerator for up to 3 days. To reheat, preheat the air fryer at 380 degrees for 5 minutes and then let them heat up and crisp for 4-5 minutes.

  • Air Fryer

Ingredients  

  • 1 large zucchini, cut into sticks
  • 2 cups gluten free crackers, blended into crumbs
  • 1 egg
  • sprinkle of salt

Chipotle Mayo

  • 1/4 cup vegan mayo
  • 3 tsp sriracha

Instructions 

  • Wash zucchini and cut it into sticks about 4 inches long and as even as possible.
  • Crack the egg in a small bowl and whisk.
  • Make crackers into a crumb mixture by blending them in a food processor.
  • Line the air fryer with foil and make sure not to cover all of the holes or you can spray oil on the base of the air fryer (if no foil) so the fries do not stick.
  • Preheat the air fryer at 380 degrees for 5 minutes.
  • Dip the zucchini sticks into the egg mixture first and make sure the sticks are fully coated. Then roll each stick in the cracker mixture and place in the air fryer. Make enough sticks to cover the bottom of the air fryer but do not overlap the sticks.
  • Cook at 380 degrees for 6 minutes, then shake and cook for 2 more minutes or until crispy. Repeat until all of your sticks are cooked.
  • Mix chipotle mayo ingredients together in a small bowl and ENJOY!
