These roasted pumpkin seeds make a great salad topper or avocado toast topper.  Easy to make on a sheet pan, just roast them with olive oil and spices, and store in an airtight container at room temperature for up to a week. They add the most delicious crunch to any dish and are packed with healthy fats, which aid in digestion!
