Strawberry Breakfast Bars | GIRLS WHO EAT

One of my favorite things to do in summer is go berry picking so when I was home in Boston recently, this was on my to do list. Lucky for me, I picked strawberries at the beginning of the berry season and filled up a huge box with small juicy strawberries from a local farm. Fresh strawberries call for baked goods – so I made these delicious and simple oat breakfast bars and they barely lasted two days.

This recipe only has whole ingredients and is 100 percent vegan. The base and crumble are the same oat blend and the inside mixture is a strawberry jam made with only a couple of ingredients. They are soft and chewy and perfect for breakfast or as a midday snack. They are packed with oats which means they are high in fiber, antioxidants, and some essential vitamins.

These bars take about 10-15 minutes to prepare and while the strawberry filling is on the stove, you can prep the oat base. Everything can be made and mixed by hand, so no appliances, like a blender are needed.

I suggest storing these in an airtight container in the refrigerator for up to three days (if they last that long)!

Substitution ideas:

  • Strawberries: you can do raspberries or blackberries
  • Banana: you can substitute in 1/4 cup of almond butter

Ingredients  

Oat Base

  • 2 cups rolled oats
  • 1 tsp cinnamon
  • 1 banana, mashed
  • 1 cup almond flour
  • 1/2 tsp baking powder
  • 1 tbsp coconut oil, melted
  • 3 tbsp maple syrup

Strawberry Filling

  • 2 cups strawberries, sliced
  • 1/2 tsp vanilla extract
  • 1 tbsp maple syrup
  • 1 tbsp water

Instructions 

  • Preheat the oven to 350 degrees.
  • While the oven heats up, slice strawberries and heat a medium pan over medium heat on the stove. Put all of the strawberry filling ingredients on the stove and cook for a few minutes on low heat and let simmer for 3-5 minutes. Stir frequently.
  • While the filling cooks, put all of the oat base ingredients into a medium mixing bowl. Using a hand mixer or whisk, mix oat base together well.
  • Line a deep pan with parchment paper and use 1/2 the dough to make a thin layer of oat base (about ΒΌ inch) then add the strawberry filling on top of the oat mixture and crumble the remaining dough on top.
  • Bake for 30 minutes and ENJOY!
