I am always in the mood for chocolate, but wanted something that would not spike my blood sugar and would be a good treat throughout the day. I made these power date balls and I say power because they’re packed with healthy fats from the almonds, made with dates to give you a natural sugar kick, and have protein thanks to the hemp seeds! These balls are great for an on-the go snack or a post-dinner treat. They are vegan, dairy free, and sugar free!
I recently became obsessed with Daily Crunch Snacks. They make sprouted almond and nut mixes that have a lighter and more airy taste than a traditional raw nut. Their almonds are soaked and sprouted, so they are more nutritious than raw almonds and are better for digestion. One of their signature flavors is coffee, which is just almonds and coffee. I used that in this recipe for a little coffee taste, but you can easily use any kind of almonds, including raw ones!Â
These truffles are great because they are no bake and take very minimal prep. They are soft on the inside with a nice hard chocolate outside. You will want to soak your dates in advance so they soften, then just throw everything in a blender or food processor. Move the blender mixture to a bowl and scoop out 2 tbsp balls. Place them on a baking tray with parchment paper until you use up all of the mixture. Warm up your chocolate dip in the microwave until it is liquidy, dip your balls fully into the chocolate and top with some chopped nuts (optional), store them into the fridge until they harden, and all done!
These will last for 1 week in the refrigerator and should stay in cold temperature so they do not melt.
