This chocolate bark recipe is a great go-to no-bake dessert because it takes 10 minutes to make and requires no appliances. The best part of this treat is you can add on nuts, seeds, dried fruit or any toppings you have in your pantry. This version is made with by adding in vegan mini marshmallows and graham crackers! It is vegan and gluten free and the perfect after dinner dessert.
For this recipe, you will need:
- 8×8 Baking Pan
- Parchment Paper
- Chocolate Chips: I use Hu Gems, which are both refined sugar free and dairy free
- Coconut Oil: this helps to melt the chocolate
- Marshmallows: I used mini vegan marshmallows
- Graham Crackers: I used Healing Home Foods graham crackers but any will do
- Peanut Butter
Tips:
- Using coconut oil is optional but helps melt the chocolate
- Melt chocolate in microwave in 30 second intervals and stir in between
- Use a square or rectangle baking pan lined with parchment paper that can fit in the freezer
- No marshmallows or graham crackers? Use nuts, seeds, or dried fruit (just keep measurements the same)

- I store these in the refrigerator in a sealed airtight container for up to 5 days!

Ingredients
- 1 cup dairy free chocolate chips, melted
- 1/2 tsp coconut oil, melted
- 3/4 cup vegan marshmallows
- 1/4 cup crushed graham crackers
- 1-2 tbsp peanut butter
Instructions
- Line an 8x8 baking pan with parchment paper.
- Place chocolate chips and coconut oil in a bowl and place in the microwave. Microwave in 30 second intervals and stir in between until chocolate is fully melted.
- Add melted chocolate to the baking pan and use a spatula to help flatten so it is even across the pan (about ⅛ inch to ¼ inch thick).
- Add your toppings (marshmallows, graham crackers) and then your peanut butter drizzle. You can use a fork to help spread the peanut butter out.
- Place in the freezer for 10 minutes to harden, then ENJOY!
