I know there are endless banana bread recipes to choose from, but let me tell you why I love this one. It’s made with oat flour, so it’s packed with fiber and protein. Plus, it is more dense than traditional banana bread so it is a hearty breakfast that will keep you sustained until lunch! Banana bread is a delicious classic recipe and this one is moist with the banana taste you know and love but you can eat it guilt free for breakfast or a snack during the day.

To make this recipe you will need:

  • One Medium Mixing Bowl
  • Bread Pan + Parchment Paper
  • Bananas: ideally ones that are browned and really ripe
  • Eggs
  • Maple Syrup
  • Plant Based Milk: I like to use Elmhurst 1925 Almond or Cashew
  • Vanilla Extract
  • Baking Soda
  • Cinnamon
  • Oat Flour: you can either buy store bought oat flour or make your own by using a blender or food processorΒ  until they become a flour. If you make your own flour, start with 2 cups of flour instead of 2 Β½ cups and if your mixture is still very liquidy add another Β½ cup.
  • Chocolate Chips: my go-to are Hu Gems because they are refined sugar free

Tips:

  • I have not tried using any other flours other than oat (flours are not a 1:1 substitute) so just be careful if you choose to switch out the oat flour for something different
  • You can make these into muffins instead

How to Store

  • You can store at room temperature for 2-3 days by covering the bread pan with Bee’s Wrap or tin foil. You can store in the refrigerator for up to a week and in the freezer for up to 4 months by wrapping it in plastic wrap, then in tin foil, and placing it in a plastic ziploc bag.

Cooking & Baking Supplies

Ingredients  

  • 2 ripe bananas, mashed
  • 2 eggs
  • 1/2 cup maple syrup
  • 1/3 cup plant based milk
  • 1 1/2 tsp vanilla extract
  • 1 tsp baking soda
  • 1 tsp cinnamon
  • 2 1/2 cups oat flour
  • 1/2 cup chocolate chips (optional)

Instructions 

  • Preheat the oven to 350 degrees and line a bread tray with parchment paper.
  • In a medium mixing bowl, mash bananas, then add in wet ingredients (eggs, maple syrup, milk, and vanilla extract) and mix well.Add in dry ingredients, baking soda, cinnamon, and oat flour and mix together well.
  • Fold in chocolate chips (save some for the top) and mix into the batter.
  • Pour the mixture into the bread tray and top with extra chocolate chips.
  • Cook for 45-50 minutes or until edges are a light brown
  • Let cool and ENJOY!
