Creamy Pistachio Nice Cream

The most requested flavor of nice cream was pistachio, so I’ve got you covered. This one is 5 ingredients and uses both banana and avocado to make it creamier. It takes less than 10 minutes to blend together and is vegan, gluten free, and refined sugar free.

I highly recommend making it into an ice cream sandwich like using my Salted Chocolate Chip Cookies! This does take a little bit more time, but you can easily prep the cookies in advance. I suggest putting the cookies in the fridge to harden up slightly before you make an ice cream sandwich so it holds together well!

This nice cream is packed with taste and I used one of my favorite clean milks, Three Trees, which adds to the creamy texture! It will last for up to 2 weeks in the freezer so is the perfect post-dinner treat.

Ingredients  

  • 3 bananas, cut in half and frozen
  • 1 avocado, scooped out
  • 1/2 cup unsalted pistachios, chopped
  • sprinke of salt
  • 1/4 cup dairy free milk
  • 1 tbsp maple syrup (optional)

Instructions 

  • Place all ingredients into a food processor (make sure bananas are frozen) and blend until smooth. It usually helps to pulse for the first 10-15 seconds, then blend. If you want a crunch, add in some additional chopped pistachios.
  • Enjoy right away or place in an airtight container that can be sealed well in the freezer.
