churro nice cream | GIRLS WHO EAT

Looking for a delicious and healthy dessert?Β  This churro nice cream is four ingredients and filled with cinnamon, sweetened with date syrup, and is really creamy from the bananas and nut milk. Not only is it vegan, gluten free, and refined sugar free – it only takes 10 minutes to whip up and can be stored in the freezer.

I love making nice cream because it is easy and requires minimal prep and is also a great way to use really ripe bananas. Prep requires peeling, slicing bananas into quarters or slivers, and then freezing them in advance – it’s that simple.Β  Then you need a high power blender or food processor and you simply throw everything in at once and blend until smooth. For this version of nice cream (I love trying new flavors), I recommend using date syrup as a natural sweeter, but if you don’t have that on hand, you can also use maple syrup.

I love adding cinnamon to any recipe because it aids in digestion and have always been longtime fans of churros, so that is where the inspiration for this recipe came from. I put this nice cream inside hard shell tacos to celebrate National Taco Day, added in some Nemi Holisticks (use code GIRLSWHOEAT for 15% off) which are churro cactus chips for some crunch, and drizzled Just Date Syrup (use code GIRLSWHOEAT for 10% off) to top it off. This nice cream creation mixes cold ice cream with lots of crunch making it a delish combo!

Substitution Ideas:

  • Dairy Free Milk: you can use regular milk or coconut milk
  • Date Syrup: drizzle chocolate instead

Remove from the freezer 15-20 minutes before you plan to eat the nice cream so it can soften a little bit. This nice cream can last in the freezer for up to two weeks!
