Peanut Butter Chocolate Chip Nice Cream

Being dairy free doesnโ€™t mean you have to be deprived of ice cream especially during summer when it is all I crave over here! Lately I’ve been obsessed with making nice cream (banana based ice cream) because there are so many different combos to make and it literally takes two minutes and can be eaten right away or stored in the freezer for up to 2 weeks to enjoy. I recommend you remove it from the freezer 15-20 minutes before you plan to eat the nice cream so it can soften a little bit.

The only prep you will need to do in advance of making this is to cut a banana into quarters or slices and store it in the freezer for at least one night so it is frozen before you use it. You will want to keep the banana in an airtight container.

Once you have your frozen bananas all you have to do is blend all your ingredients in a high power blender or food processor. It will create a smooth ice cream like texture that can be enjoyed right away or stored in the freezer for a few days to be enjoyed later. If you want to store your nice cream in the freezer, I suggest lining a tray (I use a bread/loaf pan) with parchment paper before you add the nice cream mixture. You will then want to cover the tray tightly with plastic wrap or you can also store in an airtight plastic or glass container.

This was actually my first nice cream flavor I ever made, a peanut butter chocolate combo and it did not disappoint – actually I ate it all in one night!

Substitution Ideas:

  • Almond Milk: you can use any type of milk, dairy free or not and you can also use coconut milk to make it thicker. My favorite nut milks to use are the two ingredient Elmhurst milks where the only ingredients are water and nuts or Three Trees
  • Peanut Butter: you can use any nut or seed butter. My favorite peanut butter brands to use are ones that only use one ingredient: PEANUTS! Some of these brands are Once Again Nut Butter, Thrive Market, Spread The Love
  • Chocolate Chips: these are completely optional, but add in a nice crunch! You can also use cacao nibs, coconut, or any chopped nuts. My chocolate chip preference are Enjoy Life, Hu Gems, or a Hu Simple Bar chopped up into smaller pieces

Ingredients  

  • 3 frozen bananas
  • 1/4 cup peanut butter
  • 1/2 cup almond milk
  • 1/4 cup chocolate chips

Instructions 

  • Line a bread pan with parchment paper.
  • In a high power blender or food processor, blend frozen bananas with peanut butter and almond milk until smooth.
  • Stir in chocolate chips with a spatula and transfer nice cream to bread pan and store in the freezer for a couple hours .
  • Once you remove from the freezer, let the nice cream sit out for 10-15 minutes before you eat to soften and then ENJOY!
