Cherries are the perfect summer fruit and taste amazing in this crumble that is prepped and baked in 30 minutes and is completely gluten and dairy free. Cherries are considered a superfruit because they are loaded with antioxidants, vitamin c, and fiber. There is really nothing better than eating in season cherries from May through August!

I ended up getting two bags of cherries one week, so I wanted to use them up before they went bad and I was craving something sweet but hearty so this cherry crumble was the answer. There is just something so soothing about a sweet oat crumble over warm cherries. This recipe makes enough for two people and can easily be enjoyed for dessert with a scoop of whipped cream or ice cream as a dessert or even for breakfast!

To make this recipe, chop up your cherries first. While you wait for the oven to preheat, you will want to make your filling, then the crumble, and then combine them together.

Substitution Ideas:

  • Cherries: if you’re not a cherry lover, you can swap them out for any other fruit such as berries, apple, or pear. If the fruit you use is frozen, defrost it first so fruit are room temperature.
  • Honey: you can use maple syrup instead in the filling
  • Coconut Sugar: you can use maple syrup or honey instead in the crumble

  • Staub Rectangular Baking Dish (small)

Ingredients  

Cherry Filling

  • 3 cups cherries, halved
  • 1 tbsp lemon juice
  • 1 1/2 tbsp honey
  • 1/2 tsp cinnamon

Crumble

  • 1 cup rolled oats
  • 1/4 cup coconut sugar
  • 1/2 tsp cinnamon
  • sprinkle of salt
  • 1/4 cup almond flour
  • 1/4 cup + 2 tbsp ghee (or butter), melted

Instructions 

  • Preheat the oven to 350 degrees.
  • In a medium pan over low heat, add chopped cherries, lemon juice, honey, and cinnamon and cook until filling starts to bubble.
  • While the filling is heating up, combine oats, coconut sugar, cinnamon, salt, and almond flour in a medium mixing bowl, then mix in melted ghee.
  • In an oven safe dish, spread the cherry filling evenly across the base of the dish.
  • Spread the oat crumble evenly over all of the cherries.
  • Bake for 28-30 minutes or until the top is a golden brown color, then ENJOY!
