Air Fryer Maple Acorn Squash

Acorn squash is one of my favorite winter vegetables! It is simple and easy to cook and is easy to cut and slice unlike some other squashes. This recipe is only 5 ingredients and combines sweet with spice for a delicious side dish. It is ready in 12 minutes in the air fryer and is vegan, gluten free, and nut free!

To make this recipe: 

  • Rinse your acorn squash well, then slice off the top and bottoms. Cut your acorn squash horizontally to create 1-2 inch rings (I prefer to scoop out the seeds but you can leave them in if you want). 
  • Put the squash in a mixing bowl and add the oil and spices.
  • Preheat your air fryer at 400 degrees for 3 minutes.

For this recipe, I used:

  • Acorn Squash: this is a winter squash that has sweet orange flesh and is packed with fiber and vitamins like Vitamin C.
  • Maple Syrup: this gives the dish a sweet taste, but it’s not overpowering. 
  • Paprika: this is a red mild spice that adds a ton of flavor including a hint of spice!

Tips:

  • Preheat your air fryer. This lets your air fryer get to the right temperature for cooking and allows your food to cook faster and more consistently!
  • You can either cut your acorn squash in rings like I shared above, or you can cut it in half lengthwise, scoop out the seeds, and cut 1-2 inch slivers.
  • To coat the acorn squash well, try using a pastry brush.
  • Air fryers can vary based on the brand you have, the size and how it heats up so timing for this recipe may need to be adjusted. 
  • If you do not own an air fryer, you can cook this in the oven on a baking tray with parchment paper at 400 degrees for 20 minutes and then flip the squash and cook it for another 10 minutes.

Ingredients  

  • 1 acorn squash
  • 1 tbsp olive oil
  • 2 tbsp maple syrup
  • 1/2 tsp paprika
  • 1/4 tsp salt

Instructions 

  • Rinse your acorn squash well, then slice off the top and bottoms. Cut your acorn squash horizontally to create 1-2 inch rings Place the cut squash pieces in a medium mixing bowl.
  • Preheat your air fryer for 3 minutes at 400 degrees.
  • While the air fryer heats up, add oil, maple syrup, paprika, and salt to the mixing bowl and coat squash well.
  • Place the squash in the air fryer, making sure that pieces are not overlapping and cook for 12 minutes. Shake and flip halfway (6 minute mark). Repeat this until all of the squash is cooked! ENJOY!
