I was inspired to make this jam from someone in my amazing community and I am so excited to share this recipe with you because this caramelized onion jam is absolutely delicious. Enjoy it on a crostini with some organic goat cheese as a holiday appetizer or add it to your next cheese board (perfect for the holiday season). You only need 4 simple ingredients and some fresh herbs and spices. The key is to use sweet yellow onions to get the best flavor combination of sweet and tangy. It is gluten free, vegan, and dairy free and uses coconut sugar instead of traditional refined sugar you often see in grocery store onion jams.

For this recipe, you will need:

  • Yellow Onions: You want to use these because they are a sweeter onion
  • Extra Virgin Olive Oil
  • Coconut Sugar
  • Balsamic Vinegar
  • Thyme: fresh is best and adding in spices is optional
  • Rosemary:Β  fresh is best and adding in spices is optional
  • Salt + Pepper to taste

Tips:

  • Timing may vary once you add in the balsamic and coconut sugar. You want the sauce to become a glaze that is a bit thicker
  • Fresh herbs are optional

How to Store:

  • Store in an airtight container in the refrigerator for up to one week

Ingredients  

  • 3 sweet yellow onions, thinly sliced
  • 2 tbsp extra virgin olive oil
  • 2 tbsp coconut sugar
  • 1/4 cup balsamic vinegar
  • 1 tbsp thyme or rosemary, chopped
  • sprinkle of salt + pepper

Instructions 

  • Prep and cut your onions by removing the skin, cutting the onion in half, and then cutting thin slices (about ΒΌ inch).
  • In a medium pan over medium heat, add the olive oil, let it heat up slightly and then add the onions.
  • Cook the onions for 10-15 minutes stirring them frequently until they begin to turn brown.
  • Add in the coconut sugar and balsamic vinegar and mix in with the onions. Reduce the heat to low and let everything slowly cook for 45-80 minutes until the balsamic mix is like a thick syrup and your desired consistency. Stir frequently.
  • Add in the chopped herbs, salt, and pepper, and mix everything together.
  • Remove onion jam from heat and set aside to cool.
  • Transfer the onion jam to a sealed airtight container and store in the refrigerator for up to 7 days and ENJOY!
