Pineapple and shrimp are a delicious combination that are quick to grill and make for the perfect summer dinner. These skewers are marinated in a honey lime sauce that gives them a light citrus taste and you can serve this with my lime aioli dressing over grains or salad. Once everything is on the skewers, these are ready in 10 minutes or less. They are gluten free and dairy free and an easy and simple grill meal.
For this recipe, you will need:

- Pineapple
- Garlic
- Olive Oil
- Honey: local honey is my first choice and you can usually find that at your farmer’s markets or at the grocery store
- Chili Powder
- Lime
- Vegan Mayo: regular mayo also works and this is only needed for the chipotle mayo sauce
- Salt
Tips:
- Marinade the shrimp and pineapple for 15-30 minutes to have the most flavorful skewers
- You can make all shrimp or all pineapple skewers if you do not want to have skewers with both
- Use a shallow rectangular dish to marinate the skewers
- Spray or brush the grill with oil so the skewers will not stick
- You can get these ready a day in advance and leave them marinating in the fridge

Grilled Shrimp + Pineapple Skewers

Ingredients
- 8 oz shrimp, deveined and peeled
- 1 pineapple, cut into cubes
- 2 garlic cloves, minced
- 2 tbsp olive oil
- 1 tbsp honey
- 1/2 tsp chili powder
- 1/2 lime, juiced
Lime Aioli
- 1/4 cup vegan mayo
- 1 small lime, juiced
- sprinkle of salt
- 1 tbsp water
Instructions
- Soak skewers (if using wooden ones) in water for 5-10 minutes. While the skewers soak, make the marinade in a small bowl by mixing together the minced garlic, olive oil, honey, lime, and chili powder.
- Thread the cubed pineapple pieces and shrimp onto the skewers alternating between each. When you are done, add the skewers to a large enough rectangular dish and coat with sauce. Let it marinate in the refrigerator for 15-30 minutes.
- While the skewers marinate, make the lime aioli by placing all ingredients in a small bowl and mixing them together.
- Heat up the grill to medium and coat the grill with an oil spray, then add skewers and cook for 3 minutes per side.
- Serve with a lime wedge and aioli (optional) and ENJOY!
