Easy Rocky Road Nice Cream

My favorite type of ice creams has always been ones with crunch and with chocolate, so naturally I have been a fan of rocky road for years. I wanted to create a version that was vegan and healthy. This one is full of good fats from the coconut milk and almonds so it really fills you up! It is so easy to make and is ready in under 5 minutes. You can either eat it right after you blend it up or store it in the freezer in an airtight container for up to two weeks.

There is just something about Rocky Road that brings me back to my childhood. I remember eating pints of this growing up and always loved the combination of almonds, marshmallows, and chocolate chips. It is a sweet and salty crunch that you just can’t get enough of. For this recipe, I used vegan mini marshmallows and dairy free chocolate chips. The only prep that you need to do in advance of making this is to freeze your bananas at least overnight.

Since I used coconut milk for this recipe, the nice cream was super creamy, with a hint of a coconut flavor. It will fill you up quickly so you will most likely have leftovers that can be enjoyed the next day.

Substitution Ideas:

  • Coconut Milk: can use any dairy free milk

Ingredients  

  • 3 bananas, cut up into pieces and frozen
  • 1/2 cup coconut milk (regular)
  • 3 tbsp cocoa powder 
  • 1 tbsp maple syrup (optional)
  • 1/4 cup vegan marshmallows
  • 1/4 cup chocolate chips
  • 1/4 cup almonds, chopped

Instructions 

  • In a high-speed blender or food processor, mix together bananas, coconut milk, maple syrup (if you want extra sweetness). and cocoa powder until you have a smooth texture.
  • Fold in marshmallows, chocolate chips, and almonds using a spoon or spatula.
  • Place your nice cream in a bowl and top with some extra marshmallows, chocolate chips, and almonds and ENJOY!
